Frozen custard is similar to gourmet ice cream, but there are two differences that make it a uniquely delicious product:
First, Frozen Custard is made and held at a warmer temperature than ice cream. When you taste frozen custard, you get a immediate burst of flavor instead of the “frozen tongue syndrome” caused by ice cream.
Second: Frozen custard has less air mixed into it than ice cream. Traditional ice cream is usually around 50% air, while frozen custard contains only 20% air. This results in fewer and smaller ice crystals, which yields a wonderfully smooth product.
